- 1 sheet of puff pastry
- 1 cup fresh blueberries
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 400°F (200°C). Lightly flour a clean surface and roll out the puff pastry to smooth any folds. Place the rolled pastry on a baking sheet lined with parchment.
- In a medium bowl, combine the blueberries, sugar, cornstarch, lemon zest, and lemon juice. Toss gently and let sit for a minute.
- Spoon the blueberry mixture into the center of the puff pastry, leaving a 1-inch border. Fold the edges up and over the filling. Beat the egg and brush the pastry edges.
- Bake for 20–25 minutes until the pastry is golden and the filling is bubbling. Let cool slightly on a wire rack and dust with powdered sugar before serving.

Serve warm or at room temperature. Excellent with vanilla ice cream or Greek yogurt.
