Instructions
- In a sturdy glass, add 6–8 fresh mint leaves, 1 ounce fresh lime juice, and 1 ounce simple syrup. Use a muddler or the back of a spoon to press the mint gently. Muddle just enough to release the mint oils and lime fragrance. Avoid tearing the leaves into bits.
- Add 2 ounces white rum to the glass. Fill the glass with ice—cubes or crushed ice both work. The ice chills the drink and helps with gentle dilution.
- Top the glass with club soda (about 2–3 ounces or to taste). There is no heat here; this step is about building and balancing flavors and keeping the soda’s fizz.
- Stir gently to combine the lime-mint base, rum, and soda. Garnish with a lime slice and a mint sprig. Smell the mint before sipping for a bright, fresh aroma. Serve right away.
