- 2 cups cooked macaroni
- 1 cup shredded chicken
- 1/2 cup BBQ sauce
- 1 jalapeño, diced
- 1 cup cheddar cheese (shredded)
- 1/2 cup Greek yogurt
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a small baking dish or spray with nonstick spray. Dice the jalapeño, removing seeds if you want less heat.
- Mix the cooked macaroni, shredded chicken, BBQ sauce, diced jalapeño, Greek yogurt, salt, and pepper in a large bowl until well combined. Taste and adjust seasoning or add more BBQ if desired.
- Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the shredded cheddar cheese on top. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with extra jalapeño rings or chopped cilantro if desired.
Notes
For a vegetarian option, use shredded jackfruit or extra beans. Let it rest to ensure clean slices.
