Description

Warm, cheesy, and with a bright jalapeño kick, this dish blends tender shredded chicken, smoky-sweet BBQ, and creamy Greek yogurt over macaroni for a filling, protein-forward meal.


Ingredients

  • 2 cups cooked macaroni
  • 1 cup shredded chicken
  • 1/2 cup BBQ sauce
  • 1 jalapeño, diced
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a small baking dish or spray with nonstick spray. Dice the jalapeño, removing seeds if you want less heat.
  2. Mix the cooked macaroni, shredded chicken, BBQ sauce, diced jalapeño, Greek yogurt, salt, and pepper in a large bowl until well combined. Taste and adjust seasoning or add more BBQ if desired.
  3. Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the shredded cheddar cheese on top. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  4. Remove from the oven and let it cool for a few minutes before serving. Garnish with extra jalapeño rings or chopped cilantro if desired.

Notes

For a vegetarian option, use shredded jackfruit or extra beans. Let it rest to ensure clean slices.
