- 2 medium zucchinis, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat 2 tablespoons olive oil in a large pan over medium heat. Prepare the onion, garlic, and dice the zucchinis.
- Add the chopped onion to the hot oil and sauté until translucent, about 4–5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the diced zucchinis and cook for about 5 minutes until slightly softened. Add the crushed tomatoes and oregano, season with salt and pepper, and bring to a gentle simmer.
- Let cook, uncovered, for 15–20 minutes until the zucchini is tender and the sauce thickens. Stir in chopped basil before serving.
Notes
For a smoother sauce, blend briefly with an immersion blender. Adjust salt gradually to taste.
