- 1 cup pomegranate juice
- 1/2 cup orange juice
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh pomegranate seeds and orange slices for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine the pomegranate juice, orange juice, honey, and soy sauce. Bring to a boil, then reduce heat and let it simmer for about 10 minutes until it thickens slightly.
- While the glaze simmers, season the salmon fillets with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Add the salmon fillets, skin-side down, and sear for 3-4 minutes until the skin is crispy.
- Pour the glaze over the salmon and transfer the skillet to the preheated oven. Bake for 10-12 minutes or until the salmon flakes easily with a fork.
- Serve garnished with fresh pomegranate seeds and orange slices.
