Ingredients

  • 1 cup pomegranate juice
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh pomegranate seeds and orange slices for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine the pomegranate juice, orange juice, honey, and soy sauce. Bring to a boil, then reduce heat and let it simmer for about 10 minutes until it thickens slightly.
  3. While the glaze simmers, season the salmon fillets with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Add the salmon fillets, skin-side down, and sear for 3-4 minutes until the skin is crispy.
  5. Pour the glaze over the salmon and transfer the skillet to the preheated oven. Bake for 10-12 minutes or until the salmon flakes easily with a fork.
  6. Serve garnished with fresh pomegranate seeds and orange slices.
