Description
These cookies are a simple pleasure: creamy peanut butter folded with crunchy cornflakes and a hint of vanilla, with a tender center and crisp edges.
Ingredients
Scale
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup cornflakes
- 1 large egg
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- Combine the peanut butter, granulated sugar, egg, vanilla extract, and salt in a mixing bowl. Stir until smooth and well blended.
- Fold in the cornflakes and chocolate chips gently. Drop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden but the centers look slightly soft.
- Cool on the baking sheet for 3-5 minutes before transferring them to a wire rack to cool completely.
Notes
For uniform cookies, use a small ice cream scoop. Store in an airtight container for up to 3 days.
