- 1 lb ground beef
- 1 onion, finely chopped
- 1 cup bread crumbs
- 1 egg
- 1 packet French onion soup mix
- 1 cup beef broth
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine ground beef, chopped onion, bread crumbs, egg, French onion soup mix, salt, and pepper. Mix until well combined.
- Form the mixture into evenly sized meatballs (about 1 to 1.25 inches each) and place them in the crock pot.
- Pour beef broth over the meatballs and cook on low for 6–8 hours or on high for 3–4 hours until fully cooked and tender.
- About 30 minutes before serving, sprinkle shredded mozzarella cheese on top of the meatballs and cover until the cheese melts and becomes bubbly. Garnish with fresh parsley before serving.
Notes
For firmer meatballs, brown them quickly in a skillet before adding to the crock pot. Use low-sodium beef broth for richer flavor.
