Delightful and elegant truffles made with dark chocolate and raspberry puree, perfect for gifting or enjoying as a treat.

- 8 oz dark chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup raspberry puree
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
- Fresh raspberries for garnish
Instructions
- Measure and chop the dark chocolate into small pieces and place in a heatproof bowl. Chill a plate or tray lined with parchment paper and have a small sieve ready for dusting cocoa.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour the hot cream over the chopped dark chocolate. Let sit for 1 minute, then stir until completely melted and smooth.
- Mix in the raspberry puree and vanilla extract until fully combined and glossy. Taste and adjust with a pinch of salt if necessary.
- Transfer the mixture to a bowl and refrigerate for about 2 hours or until firm. Once firm, scoop out the mixture and roll into small balls. Roll each truffle in cocoa powder to coat and place on a plate. Garnish with fresh raspberries. Serve chilled or at room temperature.

These truffles are quick to make and taste like a small luxury. They look beautiful when dusted with cocoa and garnished with a fresh raspberry.
