- 2 Honeycrisp apples, chopped
- 4 cups mixed greens
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens. Core and chop the Honeycrisp apples into bite-size pieces. Crumble the feta if needed. Chop the walnuts into smaller pieces.
- In a large bowl, combine the mixed greens, chopped Honeycrisp apples, feta cheese, walnuts, and dried cranberries. Toss gently.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until the dressing is glossy.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
