Description

A bright, crunchy salad that balances sweet Honeycrisp apples with tangy feta and crunchy walnuts, perfect for lunch or dinner parties.


Ingredients

  • 2 Honeycrisp apples, chopped
  • 4 cups mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens. Core and chop the Honeycrisp apples into bite-size pieces. Crumble the feta if needed. Chop the walnuts into smaller pieces.
  2. In a large bowl, combine the mixed greens, chopped Honeycrisp apples, feta cheese, walnuts, and dried cranberries. Toss gently.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until the dressing is glossy.
  4. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
