Ingredients

  • 4 large eggs
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a standard loaf pan (8×4 inch) with olive oil or line with parchment paper.
  2. In a mixing bowl, combine cottage cheese and eggs; mix until mostly smooth. Add almond flour, coconut flour, baking powder, salt, and olive oil, stirring until evenly combined. Fold in herbs or spices if desired.
