Description

This warm, creamy soup features Italian sausage, tender potatoes, and leafy kale simmered in a rich broth for a comforting meal.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Brown Italian sausage in a skillet over medium heat, then transfer to a slow cooker.
  2. Add chopped onion and minced garlic to the slow cooker with the sausage. Pour in chicken broth and add sliced potatoes on top, stirring gently to combine.
  3. Cover and cook on low for 6 hours or high for 3 hours until potatoes are tender.
  4. About 30 minutes before serving, stir in chopped kale and heavy cream. Season with salt, pepper, and red pepper flakes if desired. Adjust seasoning before serving.

Notes

For a lighter version, substitute half-and-half for heavy cream. Freeze leftovers for up to 2-3 months.
