Ingredients

- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup chopped kale or spinach
- 1 cup diced zucchini
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Chop the onion, mince the garlic, and dice the zucchini. Wash and chop the kale or spinach. Measure the broth and cream.
- Place a large pot over medium heat. Add ground beef and break it up while cooking, seasoning lightly with salt and pepper.
- Brown the ground beef until no pink remains, drain excess fat, then add diced onion and minced garlic. Cook until onion is translucent, about 3-4 minutes. Stir in beef broth and bring to a simmer.
- Add heavy cream, chopped greens, diced zucchini, and Italian seasoning. Season with additional salt and pepper. Simmer gently for about 20 minutes until veggies are tender and flavors meld.
- Taste and adjust seasoning. For a thicker soup, simmer uncovered for a few extra minutes. Serve hot with black pepper or red pepper flakes for heat.
Notes
Serve with grated Parmesan or a drizzle of olive oil. Can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
