Description

A warm, creamy soup full of savory beef flavor, perfect for a low-carb meal.


Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup chopped kale or spinach
  • 1 cup diced zucchini
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Chop the onion, mince the garlic, and dice the zucchini. Wash and chop the kale or spinach. Measure the broth and cream.
  2. Place a large pot over medium heat. Add ground beef and break it up while cooking, seasoning lightly with salt and pepper.
  3. Brown the ground beef until no pink remains, drain excess fat, then add diced onion and minced garlic. Cook until onion is translucent, about 3-4 minutes. Stir in beef broth and bring to a simmer.
  4. Add heavy cream, chopped greens, diced zucchini, and Italian seasoning. Season with additional salt and pepper. Simmer gently for about 20 minutes until veggies are tender and flavors meld.
  5. Taste and adjust seasoning. For a thicker soup, simmer uncovered for a few extra minutes. Serve hot with black pepper or red pepper flakes for heat.

Notes

Serve with grated Parmesan or a drizzle of olive oil. Can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
