- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 2 cups uncooked pasta (elbow or penne)
- 4 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, green onions, avocado
Instructions
- Brown the ground beef in a skillet over medium heat until no pink remains. Drain off excess fat.
- Add the cooked beef to the crockpot along with the taco seasoning, black beans, corn, diced tomatoes with green chilies, uncooked pasta, and beef broth. Stir gently to combine.
- Cover and cook on low for 4–6 hours, stirring once or twice if possible, until the pasta is tender and the sauce has thickened slightly.
- Just before serving, stir in the shredded cheese until melted. Taste and adjust with salt or pepper if needed. Serve hot with optional toppings.
Notes
For a creamier texture, stir in 1/2 cup sour cream or cream cheese before serving. Adjust broth for desired sauce thickness.
