Description

A warm, hearty weeknight meal combining browned beef with tender potatoes and bold taco seasoning, topped with cheese, sour cream, and salsa.


Ingredients

  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup beef broth
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, salsa, chopped cilantro

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat from the pan.
  2. Add the chopped onion and minced garlic to the skillet. Sauté with the beef until the onion is soft and translucent and the garlic is fragrant, about 2–3 minutes.
  3. Stir in the diced potatoes and sprinkle in the taco seasoning. Cook and stir for about 5 minutes so the potatoes start to pick up the seasoning and brown slightly.
  4. Pour in the beef broth, reduce heat to low, and cover the skillet. Let the mixture simmer for 15–20 minutes, or until the potatoes are tender when pierced with a fork. Taste and season with salt and pepper. Serve in bowls and top with shredded cheese, sour cream, salsa, and cilantro.

Notes

For crispier potatoes, cook uncovered for the last 5 minutes. Adjust taco seasoning to taste and consider adding lime for brightness.
