Description
A warm, hearty weeknight meal combining browned beef with tender potatoes and bold taco seasoning, topped with cheese, sour cream, and salsa.

- 1 lb ground beef
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup beef broth
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, salsa, chopped cilantro
Instructions
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat from the pan.
- Add the chopped onion and minced garlic to the skillet. Sauté with the beef until the onion is soft and translucent and the garlic is fragrant, about 2–3 minutes.
- Stir in the diced potatoes and sprinkle in the taco seasoning. Cook and stir for about 5 minutes so the potatoes start to pick up the seasoning and brown slightly.
- Pour in the beef broth, reduce heat to low, and cover the skillet. Let the mixture simmer for 15–20 minutes, or until the potatoes are tender when pierced with a fork. Taste and season with salt and pepper. Serve in bowls and top with shredded cheese, sour cream, salsa, and cilantro.
Notes
For crispier potatoes, cook uncovered for the last 5 minutes. Adjust taco seasoning to taste and consider adding lime for brightness.
