Description

Bright, savory, and easy to make, this Grinder Pasta Salad features rotini pasta tossed with fresh vegetables, salami, and provolone for a classic Italian deli flavor.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup provolone cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. While the water heats, prepare the vegetables.
  2. In a large mixing bowl, combine tomatoes, cucumber, red onion, black olives, salami, provolone, and parsley.
  3. Cook the rotini pasta according to package instructions until al dente. Drain and rinse briefly under cold water.
  4. Add the cooled pasta to the bowl of vegetables. Pour Italian dressing over the salad and toss to coat. Season with salt and pepper. Refrigerate for at least 30 minutes before serving.

Notes

For best flavor, chill for 1-2 hours. If making ahead by more than a day, store the dressing separately and mix just before serving.
