- 4 chicken breasts
- 1/4 cup olive oil
- 2 lemons (juiced and zested)
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup feta cheese (crumbled)
- 1/4 cup fresh parsley (chopped)
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season lightly with salt and pepper. Zest and juice the lemons, and mince the garlic.
- In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, and a pinch of salt and pepper. Taste the marinade and adjust for tang or salt.
- Place the chicken breasts in a baking dish in a single layer. Pour the marinade evenly over the chicken, turning the breasts to coat well. Sprinkle the crumbled feta cheese on top. Bake for about 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the dish from the oven and let the chicken rest for 5 minutes. Garnish with chopped fresh parsley before serving.
Notes
For best results, pound chicken breasts to even thickness and use room-temperature chicken. Adjust salt based on feta saltiness.
