Description

A delightful Caribbean dish combining fluffy, mashed plantains with succulent garlic shrimp for a comforting and flavorful meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 ripe plantains, peeled and cut into 1-inch pieces
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • 1/4 cup butter
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, boil plantains in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add shrimp to the skillet, season with salt and pepper, and cook until shrimp turn pink and opaque, about 4-5 minutes. Remove from heat.
  4. In a large bowl, mash the boiled plantains until smooth, mixing in enough chicken broth to reach desired creamy consistency.
  5. Serve the creamy mashed plantains topped with the garlic shrimp mixture and garnish with fresh cilantro.
