- 1 lb shrimp, peeled and deveined
- 4 ripe plantains, peeled and cut into 1-inch pieces
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup olive oil
- 1/4 cup butter
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, boil plantains in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- In a skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Add shrimp to the skillet, season with salt and pepper, and cook until shrimp turn pink and opaque, about 4-5 minutes. Remove from heat.
- In a large bowl, mash the boiled plantains until smooth, mixing in enough chicken broth to reach desired creamy consistency.
- Serve the creamy mashed plantains topped with the garlic shrimp mixture and garnish with fresh cilantro.
