Description

A simple, buttery bean side dish enhanced with garlic, lemon, and fresh thyme. Quick to prepare and perfect for pairing with roasted meats or salads.


Ingredients

  • 2 cups canned butter beans (drained and rinsed)
  • 4 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 teaspoon thyme (dried or fresh)
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Chopped parsley for garnish (optional)

Instructions

  1. Drain and rinse the canned butter beans well. Mince the garlic. If using fresh thyme, strip the leaves from the stems. Measure the butter and lemon juice.
  2. Place a large skillet over medium heat and add the butter. Let it melt until it is foamy. Add the minced garlic and thyme, stirring briefly to combine the flavors.
  3. Add the drained butter beans to the skillet. Gently toss or stir to coat each bean in the garlic butter. Cook for 5–7 minutes, stirring occasionally, until the beans are heated through and tender.
  4. Season the beans with salt, pepper, and lemon juice. Stir to combine. Transfer to a serving bowl and garnish with parsley if desired. Serve warm.

Notes

For extra creaminess, mash a few beans during cooking. Store leftovers in an airtight container in the fridge for up to 3–4 days.
