A comforting, crunchy weeknight dish combining sautéed cabbage, seasoned beef, beans, and the fun crunch of Fritos and melted cheese.

- 1 head of green cabbage, chopped
- 1 pound ground beef (or turkey)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes (14.5 oz)
- 1 cup corn (fresh, canned, or frozen)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups Fritos corn chips
- 1 cup shredded cheese (cheddar or your choice)
- Sour cream for serving (optional)
Instructions
- Gather and prep ingredients by chopping the cabbage, dicing the onion, and mincing the garlic.
- In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, about 6–8 minutes. Drain excess fat if needed.
- Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3–4 minutes.
- Stir in the cabbage, black beans, diced tomatoes, corn, chili powder, and cumin. Season with salt and pepper. Cover and cook until the cabbage is tender, about 10–15 minutes.
- Transfer the cabbage mixture to a serving dish and sprinkle Fritos and cheese on top. Optionally broil for 1–2 minutes until cheese melts.
- Serve hot with sour cream on the side.
Notes
For a vegetarian version, skip the meat and use additional beans or mushrooms. Store leftovers in an airtight container and keep chips separate to maintain crunch.
