Description

A comforting, crunchy weeknight dish combining sautéed cabbage, seasoned beef, beans, and the fun crunch of Fritos and melted cheese.


Ingredients

  • 1 head of green cabbage, chopped
  • 1 pound ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup corn (fresh, canned, or frozen)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups Fritos corn chips
  • 1 cup shredded cheese (cheddar or your choice)
  • Sour cream for serving (optional)

Instructions

  1. Gather and prep ingredients by chopping the cabbage, dicing the onion, and mincing the garlic.
  2. In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned, about 6–8 minutes. Drain excess fat if needed.
  3. Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3–4 minutes.
  4. Stir in the cabbage, black beans, diced tomatoes, corn, chili powder, and cumin. Season with salt and pepper. Cover and cook until the cabbage is tender, about 10–15 minutes.
  5. Transfer the cabbage mixture to a serving dish and sprinkle Fritos and cheese on top. Optionally broil for 1–2 minutes until cheese melts.
  6. Serve hot with sour cream on the side.

Notes

For a vegetarian version, skip the meat and use additional beans or mushrooms. Store leftovers in an airtight container and keep chips separate to maintain crunch.
