- 1 head of green cabbage, chopped
- 1 pound ground beef or turkey
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 2 cups Fritos corn chips
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 1 tablespoon taco seasoning
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium. Add the ground beef or turkey and the chopped onion. Brown the meat, breaking it up with a spoon, until fully cooked and the onion is translucent. Drain excess fat if needed.
- Stir in the chopped cabbage, the can of diced tomatoes with green chilies (with juices), the drained black beans, and the taco seasoning. Mix well so the seasoning coats everything.
- Cook the mixture, stirring occasionally, until the cabbage is tender but still has some body — about 8–12 minutes. Taste and season with salt and pepper to your preference.
- In a large serving dish, layer half of the beef and cabbage mixture. Sprinkle half of the shredded cheese, then half of the Fritos. Repeat the layers with the remaining mixture, cheese, and Fritos. Serve warm, garnished with extras like sour cream, chopped cilantro, or sliced green onions if desired.
Notes
Serve with garnishes like sour cream, salsa, avocado, or sliced jalapeños. Best enjoyed fresh with topping added right before serving.
