Instructions
- Preheat oven to 350°F (175°C). Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook until caramelized, about 10–15 minutes. Season chicken with salt and pepper.
- In a large bowl, combine cooked rice, diced chicken, caramelized onions, and French onion soup. Season with additional salt and pepper, mixing gently.
- Grease a baking dish, transfer the mixture, and spread it evenly. Sprinkle cheese over the top and bake for 25–30 minutes until cooked through and bubbly.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.
