Description

A delightful casserole that combines the classic flavors of eggs benedict with savory ground beef, crispy bacon, and gooey cheese, perfect for brunch or any meal.

Ingredients

Scale
  • 1 lb ground beef
  • 6 large eggs
  • 2 cups milk
  • 1 cup English muffins, torn into pieces
  • 1 cup shredded cheese (e.g., cheddar or Swiss)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1/4 cup hollandaise sauce (optional for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
  3. In a large bowl, whisk together eggs and milk. Season with salt and pepper. Add torn English muffins, shredded cheese, cooked beef, crumbled bacon, and chopped green onions. Stir until mixed.
  4. Pour the mixture into a greased baking dish and spread evenly. Bake for 35-40 minutes until eggs are set and the top is golden.
  5. Let cool slightly before serving. Drizzle with hollandaise sauce if desired.

Notes

For added flavor, try using breakfast sausage instead of ground beef. You can also incorporate greens or experiment with different cheeses.
