Description

A moist and tender cake highlighting sweet potato, with a hint of gin for a unique flavor.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup gin
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, combine the mashed sweet potatoes, almond flour, sugar, eggs, melted butter or coconut oil, gin, and vanilla extract. Mix until smooth.
  3. Add the baking powder, cinnamon, and salt, and mix again until well combined. Pour the batter into the prepared cake pan and spread evenly. Bake for 25–30 minutes or until a toothpick comes out clean.
  4. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve as-is or top with your favorite toppings.

Notes

Can be served plain, dusted with powdered sugar, or accompanied by a dollop of whipped cream.
