Description

A warm, one-pot dinner featuring tender chicken, spicy andouille, and juicy shrimp with rice and bright vegetables.


Ingredients

  • 1 pound chicken, diced
  • 1 pound andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 cups rice (uncooked)
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Olive oil (1–2 tablespoons)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and sausage, cooking until browned (6–8 minutes).
  2. Add onion, green bell pepper, celery, and garlic; sauté until tender (4–5 minutes).
  3. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper. Bring to a boil, reduce heat to low, cover, and simmer for about 20 minutes.
  4. Add shrimp and cook for an additional 4–6 minutes until shrimp is cooked through.

Notes

Garnish with chopped green onions or fresh parsley. Add a lemon wedge for brightness.
