Description

A quick and filling skillet meal featuring ground turkey, potatoes, and savory spices that works for breakfast, lunch, or dinner.


Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups diced potatoes (or sweet potatoes)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Dice the onion, bell pepper, and potatoes into even pieces.
  2. Add the diced onion and bell pepper to the skillet. Sauté until softened and slightly translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant. Push the vegetables to the side and add the ground turkey. Cook until browned and no longer pink.
  4. Add the diced potatoes, smoked paprika, and salt and pepper to taste. Stir everything to combine.
  5. Cover the skillet and reduce heat to medium-low. Cook until the potatoes are tender, about 15–20 minutes, stirring occasionally.
  6. Remove the lid, cook 2–3 minutes more to let excess moisture evaporate. Garnish with fresh parsley if desired, and serve warm.

Notes

Great for meal prep and leftovers. This hash is freezer-friendly and can be reheated easily.
