Description

A comforting dish featuring pillowy gnocchi, savory beef sausage, and creamy Boursin with bright, roasted broccoli.


Ingredients

  • 1 package gnocchi
  • 1 lb beef sausage
  • 1 package Boursin cheese
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the broccoli florets with olive oil, salt, and pepper on a baking sheet in a single layer. Slide the sheet into the oven and roast for about 15-20 minutes, until the broccoli is tender and slightly charred at the tips.
  2. Heat a large skillet over medium heat. Remove sausage from casings if needed and add to the skillet. Cook the beef sausage, breaking it up with a spatula, until browned and fully cooked through, about 6-8 minutes.
  3. Add the gnocchi to the skillet with the cooked sausage and follow package directions—usually cook in a bit of oil or water until the gnocchi float and turn tender (about 2-4 minutes). Reduce heat to low and stir in the Boursin cheese. Mix until the cheese melts and creates a creamy sauce that coats the gnocchi and sausage.
  4. Plate the gnocchi and sausage mixture and top or serve alongside the roasted broccoli. Season with extra salt and pepper if needed.

Notes

For added freshness, garnish with a drizzle of olive oil or a sprinkle of chopped parsley before serving.
