- 4 chicken breasts
- 1 cup queso cheese
- 1 can diced tomatoes with green chilies
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil or nonstick spray.
- Drizzle the olive oil in the baking dish and place the chicken breasts in a single layer, seasoning each breast with garlic powder, onion powder, salt, and pepper.
- Pour the diced tomatoes with green chilies over the chicken. Spoon the queso cheese over each breast so they are well covered. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the queso is hot and bubbly.
- Remove from the oven and let it rest for 3-5 minutes. Garnish with fresh cilantro before serving.
Notes
For extra color, broil for 1-2 minutes at the end. If using thick queso, stir in 1-2 tablespoons of milk for a smoother sauce.
