Quick and naturally sweet date caramels made with just three ingredients for a chewy, caramel-like treat.

- 1 cup dates, pitted
- 1/4 cup nut butter (such as almond or peanut butter)
- 1/2 teaspoon vanilla extract
Instructions
- Start by pitting the dates, if they aren’t already pitted. Line a small dish (about 8×4 inches or similar) with parchment paper. Measure the nut butter and vanilla.
- Place the pitted dates, nut butter, and vanilla extract into a food processor. Pulse and then process continuously until the mixture becomes smooth, sticky, and holds together.
- Transfer the date-nut mixture to the parchment-lined dish. Spread it out evenly using a spatula, pressing firmly.
- Refrigerate the dish for about 30 minutes until firm. Once chilled, lift the mixture out using the parchment and cut into 12 squares.
Notes
Serve chilled or at room temperature alongside coffee or tea. Store in an airtight container for up to 2 weeks in the fridge, or freeze for up to 3 months.
