Description

A quick and fresh Mediterranean casserole combining tender shredded chicken, creamy tzatziki, juicy cherry tomatoes, crisp cucumber, and feta.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup tzatziki sauce
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh dill or parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium baking dish.
  2. In a large mixing bowl, combine shredded chicken, tzatziki, rice or quinoa, tomatoes, cucumber, feta, and olive oil. Season with salt, pepper, and dill or parsley if using, then mix gently.
  3. Spread the mixture in the prepared baking dish and bake for 25-30 minutes until heated through and golden.
  4. Let it rest for 5 minutes before serving, garnished with extra herbs and a drizzle of olive oil.

Notes

For a creamier finish, stir in cream cheese or Greek yogurt before baking. To prevent sogginess, pat cucumbers dry and use thick tzatziki.
