Description

Creamy inside with crisp, golden edges, these Duchess Potatoes are an elegant side that pairs well with any main dish.


Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 2 large egg yolks
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • 1 egg, beaten (for brushing)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot, allowing them to steam to remove excess moisture.
  2. Mash the potatoes until smooth and add the butter, cream, egg yolks, salt, pepper, and nutmeg. Mix until creamy and taste to adjust the seasoning.
  3. Preheat the oven to 400°F (200°C). Spoon the potato mixture into a piping bag fitted with a star tip and pipe onto a baking sheet lined with parchment paper.
  4. Brush the tops with beaten egg and bake for 20-25 minutes, or until lightly browned and crisp. Serve warm.
