- 1 sheet of puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 1 egg, beaten
- Salt and pepper to taste
- 1 tablespoon olive oil
- Sesame seeds (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil in a pan over medium heat, add spinach, and sauté until wilted, about 2–3 minutes; let cool.
- Combine drained spinach, feta, ricotta, and half of the beaten egg in a bowl. Add salt and pepper to taste.
- Roll out puff pastry and cut it into strips about 1 to 1.5 inches wide.
- Place a spoonful of filling along each strip’s center, fold, and twist to create spirals.
- Brush each twist with the remaining egg and sprinkle with sesame seeds if desired.
- Bake for 15–20 minutes until golden brown and puffed.
- Let cool slightly before serving warm.
Notes
These twists can be paired with dips like tzatziki, marinara, or lemon yogurt. Best served warm.
