Description

These savory, protein-packed muffins combine broccoli, beef, and bacon for a hearty breakfast or snack, perfect for meal prep.


Ingredients

  • 1 cup broccoli, chopped
  • 1 cup cooked beef, chopped
  • 1/2 cup cooked bacon, crumbled
  • 6 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with olive oil.
  2. Whisk together the eggs, salt, and pepper in a large bowl until smooth.
  3. Stir in the chopped broccoli, cooked beef, crumbled bacon, and shredded cheese until even.
  4. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes until set and golden on top.
  6. Let cool for a few minutes before removing from the tin.
