Description

Tender, garlicky beef and soft, flavorful potatoes slow-cooked in a rich garlic butter sauce, perfect for busy weeknights or cozy weekends.


Ingredients

  • 1.5 lbs beef bites (cubed beef)
  • 4 medium potatoes (cubed)
  • 1/2 cup garlic (minced)
  • 1/2 cup butter
  • 1 onion (chopped)
  • 2 cups beef broth
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Place the beef bites and cubed potatoes in the crockpot in an even layer. Season lightly with salt and pepper.
  2. In a saucepan, melt the butter over medium heat. Add minced garlic and chopped onion. Cook, stirring, until the onion is translucent and the garlic is fragrant (about 2–3 minutes).
  3. Pour the garlic butter mixture over the beef and potatoes in the crockpot. Add the beef broth and season with additional salt and pepper if needed. Stir gently to combine.
  4. Cover the crockpot and cook on low for 6–8 hours or on high for 3–4 hours. Cook until the beef is tender and the potatoes are soft.
  5. Serve hot, garnished with chopped fresh parsley and optionally drizzled with melted butter.

Notes

For richer flavor, consider browning the beef cubes before adding to the crockpot. Optional: Add Worcestershire sauce or Dijon mustard for depth.
