- 4 boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1 can cream of chicken soup
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot in a single layer. Season lightly with salt and pepper to taste.
- In a bowl, mix together the cream of chicken soup, chicken broth, garlic powder, and a pinch more salt and pepper. Whisk until smooth. Pour this mixture evenly over the chicken, coating each piece.
- Cover and cook on low for 4–6 hours until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
- About 30 minutes before serving, add the broccoli florets on top and cover to steam them until bright green and tender-crisp. Just before serving, stir in the shredded cheddar cheese so it melts into a creamy sauce.
Notes
Serve over rice, pasta, or mashed potatoes. Garnish with fresh parsley or chives for color.
