A silky dip made with roasted carrots, feta cheese, and Greek yogurt, perfect for parties or snacks.

- 2 cups roasted carrots
- 1 cup feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Peel and cut carrots if needed, then toss the carrots with 2 tablespoons olive oil, a pinch of salt, and a grind of black pepper. Spread them in a single layer on a baking sheet.
- After roasting and cooling slightly, place the roasted carrots into a blender or food processor. Add 1 cup crumbled feta, 1/2 cup Greek yogurt, 1 tablespoon lemon juice, and 2 cloves minced garlic.
- Blend the mixture until smooth and creamy. Pause and scrape down the sides as needed. If the dip is too thick, add a teaspoon or two of water or extra yogurt and blend again until you reach the desired consistency.
- Taste and adjust salt and pepper. Transfer the dip to a serving bowl. Garnish with chopped fresh herbs, a drizzle of olive oil, or a sprinkle of paprika. Serve warm or chilled with pita chips, bread, or raw vegetables.
Notes
For best flavor, roast carrots until very tender and slightly caramelized. Use full-fat Greek yogurt for a creamier texture.
