Description

A warm, creamy casserole combining tender chicken, bright spinach, and rich cream cheese, perfect for weeknight dinners and potlucks.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked pasta (optional)
  • 1/2 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish. Let the cream cheese sit at room temperature for 10–15 minutes to soften, if cold.
  2. In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, shredded mozzarella, chicken broth, garlic powder, salt, and black pepper. Mix until smooth and creamy. If you want pasta, fold in the cooked pasta now.
  3. Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the grated Parmesan cheese on top. Bake for 25–30 minutes or until heated through and bubbly.
  4. Remove from the oven and let rest for 5 minutes before serving. Garnish with extra Parmesan or herbs if desired.

Notes

Great for potlucks and feeds a crowd. Reheats well, and pairs nicely with salads or vegetables.
