Description

This creamy Buffalo chicken casserole is a cozy, spicy weeknight bake that combines tender shredded chicken, tangy buffalo sauce, smooth cream cheese, and melty cheddar for a rich, satisfying dish.

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 1/2 cup ranch dressing
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a medium casserole dish with butter or nonstick spray. Let cream cheese soften at room temperature for about 10 minutes.
  2. In a large bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, shredded cheddar, cooked rice, ranch dressing, and chopped green onions. Stir until smooth and evenly coated. Season with salt and pepper.
  3. Spread the chicken mixture evenly into the greased casserole dish. If desired, sprinkle breadcrumbs over the top. Bake for 25–30 minutes, or until hot and bubbly and the top turns golden.
  4. Remove from the oven and let cool for 5 minutes. Serve hot, garnished with extra chopped green onions or a drizzle of ranch if desired.

Notes

For lower-carb option, substitute cooked rice with riced cauliflower. Adjust buffalo sauce for desired spice level. Can be made ahead of time and refrigerated before baking.
