- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, diced
- 4 cups beef broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: chives or parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until no longer pink. Drain any excess fat.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 3–5 minutes.
- Stir in the diced potatoes and add the beef broth. Bring to a boil, then reduce to a simmer for about 15–20 minutes until the potatoes are tender.
- Stir in the heavy cream and warm through over low heat, seasoning with salt and pepper.
Notes
Serve with fresh chives or parsley. Pairs well with crusty bread or a green salad.
