Description

A cool, creamy party dip made with sweet corn, black beans, spicy tomatoes, and melty cheddar, perfect for game days and potlucks.


Ingredients

  • 1 can (15 oz) whole corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Tortilla chips for serving

Instructions

  1. Drain the corn and rinse and drain the black beans. Shake off excess water. Dice green onions and measure out cheese and tomatoes.
  2. In a large bowl, combine the corn, black beans, diced tomatoes, and cheddar cheese. Stir gently.
  3. In a separate bowl, whisk together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Pour the sour cream mixture over the corn mixture and stir gently until coated. Cover and refrigerate for at least 30 minutes.
  5. Garnish with chopped green onions before serving with tortilla chips.

Notes

Chill for at least 30 minutes before serving to allow flavors to meld. Store in an airtight container in the fridge for up to 3-4 days.
