Instructions
- Preparation: Gather all ingredients and measure them. If your cottage cheese is wet, drain briefly. Lightly flour your work surface.
- Mixing: In a bowl, combine cottage cheese, flour, salt, baking powder, egg, and olive oil. Mix until a dough forms, adjusting texture with water or flour as needed.
- Cooking: Heat a non-stick skillet over medium heat. Divide dough into small balls, roll into flat rounds (1/8–1/4 inch thick). Cook for 2–3 minutes on each side until golden brown.
- Finishing: Optionally sprinkle with chopped herbs immediately after cooking. Serve warm.
Notes
Serve warm with olive oil, use as a sandwich wrap, or top with various spreads. Can be stored at room temperature for 1 day, refrigerated for 3–4 days, or frozen for up to 2 months. Reheat with a few drops of water to refresh softness.
