These cottage cheese cinnamon rolls are a quick, no-yeast alternative to classic rolls with a soft, cakey texture and a sweet cinnamon filling.

- 1/2 cup sugar
- 1/4 cup butter, melted
- 2 eggs
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon

- 1/2 cup brown sugar
- 1 tablespoon cinnamon (for filling)
- 1/4 cup raisins (optional)
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together cottage cheese, sugar, melted butter, and eggs until well combined.
- In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a soft dough forms.
- On a floured surface, roll out the dough into a rectangle about 1/2-inch thick. Mix brown sugar and cinnamon, then spread it evenly over the rolled dough. Sprinkle with raisins if desired.
- Roll the dough tightly into a log and slice it into individual rolls. Place rolls in the greased baking dish and bake for 20-25 minutes until golden brown and set in the center.
- For icing, whisk together powdered sugar and milk until smooth. Drizzle over warm rolls before serving.
Notes
Serve warm for the best texture and flavor. Can be stored for up to a day at room temperature or up to 3-4 days in the refrigerator.
