Description

A quick, creamy dessert blending tangy cottage cheese with sweet mashed banana, warm vanilla, and cinnamon.


Ingredients

  • 2 cups cottage cheese
  • 2 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/2 cup Greek yogurt (optional)
  • Chopped nuts or granola for topping (optional)

Instructions

  1. Peel the bananas and mash them well in a bowl with a fork until mostly smooth. Measure out the cottage cheese, honey or maple syrup, vanilla, and cinnamon so everything is ready.
  2. In a mixing bowl, combine the cottage cheese, mashed bananas, honey or maple syrup, vanilla extract, and cinnamon. Stir or whisk until the mixture looks uniform and creamy. If you prefer a very smooth texture, pulse the mixture briefly in a blender or food processor.
  3. If using Greek yogurt, fold it gently into the mixture to create a creamier texture. Taste and adjust sweetness or cinnamon as needed.
  4. Transfer the pudding into serving bowls. Top with chopped nuts or granola if desired for crunch. Refrigerate for at least 30 minutes before serving to allow flavors to meld and the pudding to chill.

Notes

Store in an airtight container for up to 3 days. Add crunchy toppings just before serving to keep them crisp.
