A simple and elegant side dish of roasted asparagus dressed in olive oil, bright lemon juice, and melted Parmesan cheese.
Ingredients

- 1 pound asparagus, trimmed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 lemon, juiced
Instructions
- Preheat the oven to 400°F (200°C). Trim the woody ends from the asparagus and arrange in a single layer on a baking sheet.
- Drizzle the asparagus with olive oil, sprinkle with salt and pepper, and toss gently to coat.
- Place the baking sheet in the oven and bake for 10–15 minutes until tender and tips are browned.
- Remove from the oven, sprinkle with Parmesan, and return to bake until cheese melts, about 2–3 minutes. Finish with lemon juice. Serve hot.
Notes
Serve with grilled chicken, baked salmon, or crusty bread. Garnish with lemon wedges or parsley if desired.
