- 1 cup rolled oats
- 1 cup cottage cheese
- 2 cups milk
- 1/2 cup maple syrup or honey
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup raisins or nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 8×8-inch or similar baking dish with butter or nonstick spray.
- In a large bowl, combine the rolled oats, cottage cheese, milk, maple syrup (or honey), eggs, vanilla extract, cinnamon, and salt. Mix until well combined and evenly moistened.
- Pour the mixture into the greased baking dish and smooth the top with a spatula. Bake for 30–35 minutes or until the center is set and the top is lightly golden.
- Remove from the oven and let cool for 5–10 minutes before slicing. Serve warm or at room temperature with extra maple, fresh fruit, or yogurt.
Notes
For a firmer bake, use a slightly smaller dish. Can be stored in the fridge for up to 4 days and reheats well.
