Description

A cozy, protein-rich breakfast that combines warm cinnamon with creamy cottage cheese, yielding a soft, golden-baked casserole.


Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 cups milk
  • 1/2 cup maple syrup or honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup raisins or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 8×8-inch or similar baking dish with butter or nonstick spray.
  2. In a large bowl, combine the rolled oats, cottage cheese, milk, maple syrup (or honey), eggs, vanilla extract, cinnamon, and salt. Mix until well combined and evenly moistened.
  3. Pour the mixture into the greased baking dish and smooth the top with a spatula. Bake for 30–35 minutes or until the center is set and the top is lightly golden.
  4. Remove from the oven and let cool for 5–10 minutes before slicing. Serve warm or at room temperature with extra maple, fresh fruit, or yogurt.

Notes

For a firmer bake, use a slightly smaller dish. Can be stored in the fridge for up to 4 days and reheats well.
