- 1 French baguette
- 1 cup diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
- Mozzarella balls (optional, for decoration)
- Fresh basil leaves (optional, for decoration)
Instructions
- Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Mince the garlic and chop the basil. Dice the tomatoes and place them in a bowl.
- In a bowl, combine diced tomatoes, minced garlic, balsamic vinegar, chopped basil, salt, and pepper. Add a tablespoon of olive oil and gently fold to coat. Taste and adjust seasoning. Let the mixture sit for a few minutes to let flavors meld.
- Brush each bread slice lightly with olive oil on both sides. Bake the slices for 5-7 minutes until golden and crisp at the edges. Remove the bread from the oven and let the slices cool slightly.
- Top each toasted slice with the tomato mixture. Arrange the bruschetta in a circular shape to form a wreath on a serving platter. Optionally, decorate with mozzarella balls and fresh basil leaves. Serve immediately and enjoy!

Serve with a crisp white wine or sparkling cider. Store toasted bread and toppings separately to maintain crispness.
