Description

A smoky and tangy weeknight meal featuring tender chicken, warm rice, creamy avocado, and bright lime, all beautifully layered for a satisfying bowl.


Ingredients

  • 2 chicken breasts
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • Lime wedges
  • Salt and pepper to taste
  • Chipotle sauce (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and chipotle sauce. Preheat your grill or a skillet over medium-high heat. Rinse and drain the black beans, dice the tomatoes, and chop the cilantro. Warm the cooked rice if needed.
  2. In serving bowls, layer cooked rice, black beans, corn, and diced tomatoes for a balanced bite.
  3. Grill or sauté the seasoned chicken breasts until fully cooked, then let rest for 3–4 minutes before slicing.
  4. Top each bowl with sliced chicken, diced avocado, shredded cheese, and chopped cilantro. Serve with lime wedges.

Notes

Store components separately for up to 3–4 days. Reheat gently, and add avocado fresh before serving.
