Description

Ingredients

  • 1 lb chicken thighs, bone-in, skin-on
  • 1 lb Italian sausage, sliced
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 tablespoon capers
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the chicken thighs dry and season both sides with salt and pepper. Prepare the sausage, garlic, onion, and bell pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Brown the chicken thighs on both sides and set aside.
  3. Add the remaining olive oil to the skillet, then sauté the sausage until browned. Add onion, bell pepper, and garlic, cooking until softened.
  4. Deglaze the pan with white wine, scraping up browned bits. Simmer for a few minutes before returning the chicken and adding broth and capers. Cover and simmer until the chicken is cooked through.
  5. Uncover and simmer for a few minutes to thicken the sauce. Garnish with parsley before serving.

Notes

Serve with crusty bread, mashed potatoes, or a simple salad. Store leftovers in the refrigerator for up to 4 days.
