- 1 lb chicken thighs, bone-in, skin-on
- 1 lb Italian sausage, sliced
- 4 cloves garlic, minced
- 1 onion, sliced
- 1 bell pepper, sliced
- 1/2 cup white wine
- 1 cup chicken broth
- 1 tablespoon capers
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the chicken thighs dry and season both sides with salt and pepper. Prepare the sausage, garlic, onion, and bell pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Brown the chicken thighs on both sides and set aside.
- Add the remaining olive oil to the skillet, then sauté the sausage until browned. Add onion, bell pepper, and garlic, cooking until softened.
- Deglaze the pan with white wine, scraping up browned bits. Simmer for a few minutes before returning the chicken and adding broth and capers. Cover and simmer until the chicken is cooked through.
- Uncover and simmer for a few minutes to thicken the sauce. Garnish with parsley before serving.
Notes
Serve with crusty bread, mashed potatoes, or a simple salad. Store leftovers in the refrigerator for up to 4 days.
