Description

Ingredients

  • 2 chicken breasts
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 avocado (sliced)
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes and toss them with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the sweet potatoes onto a baking sheet and roast for 25-30 minutes until tender and golden, stirring halfway through.
