Ingredients

- 2 cups fresh spinach
- 1 cup blueberries
- 1 cup diced peaches
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the spinach, blueberries, and peaches. Dice the peaches and thinly slice the red onion. Crumble the feta if needed. Measure the almonds and dressing ingredients.
- Combine the spinach, blueberries, diced peaches, crumbled feta, sliced almonds, and red onion in a large bowl.
- Whisk together the olive oil, balsamic vinegar, salt, and pepper in a small bowl. (No heat required.)
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately and enjoy!

Serve chilled or at cool room temperature. For picnics, pack dressing separately to keep ingredients crisp.
