Ingredients

  • 2 cups almond flour
  • 1/2 cup protein powder
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tablespoon lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix together the almond flour, protein powder, coconut flour, baking powder, and salt in a large bowl. In another bowl, whisk the eggs, then add the applesauce, almond milk, and lemon juice, mixing well. Pour the wet ingredients into the dry ingredients and stir until a dough forms. Gently fold in the blueberries.
  3. Divide the dough into six equal portions. Shape each piece into a round and press the center to form a bagel hole or roll into a rope and join the ends. Place them on the baking sheet and bake for about 25–30 minutes until golden brown.
  4. Remove from the oven and let cool on a wire rack for at least 10 minutes before serving.

Notes

Serve warm with cream cheese, Greek yogurt, or nut butter. Adjust baking time if needed based on oven performance.
